One particularly hazardous substances is acrylamide, which is a strong toxin. It can damage the nervous system, and its frequent intake can contribute to the formation of digestive system cancers, heart disease and inflammation of tissues. From the tests carried out on animals show that acrylamide is carcinogenic and neurotoxic.
Acrylamide is formed primarily in products wysokowęglowodanowych, heat-treated (& gt; 120 deg. C.), among others during frying, baking, during heat treatment or microwave during cooking. Not only in industrial food production, but also during cooking at home. The greatest amount of this compound are present in foods and potato chips, and especially in French fries. Acrylamide was in 1994 recognized by the International Agency for Research on Cancer for the relationship probably carcinogenic to humans. This is another important motivating argument to exclude or at least significantly reducing the consumption of such products, especially for pregnant women, breastfeeding women and the youngest children.
Products, which contain the highest concentration of acrylamide is:
• Chips, potato (16-30%)
• potato crisps (4-46%)
• Coffee (13-39%)
• Cakes, cakes and biscuits (10-20%)
• Bread and other kinds of bread (10-30%)
Acrylamide can cause damage to the nervous system, the first symptoms are neurological, m. In. numbness and tingling of the limbs, convulsions and ataxia. In turn, prolonged exposure to acrylamide may lead to the destruction of the nervous system by inhibiting normal neurotransmission. It can also cause cancer of the thyroid, breast, kidney and bladder. It is particularly dangerous for pregnant women because it can penetrate through the placenta to the baby.
Food safety depends not only on environmental pollution, methods and conditions for obtaining and preparation of raw materials, but also food processing procedures.
